Our love for authenticity and nature has driven us to create a line of 100% natural products, without any addition of flavourings, additives or preservatives. The conscious choice and sensitivity towards the environment have led us towards a clear direction: that of having a local, sustainable and, as far as possible, 0 km product.
The truffles used to create our creams come entirely from the Val d’Elsa area, between Casole and Radicondoli. The choice to collaborate with a processing laboratory in the area goes without saying. The short supply chain allows us to respect high quality standards; the truffle used is truly “from the land to the table“.
Ours is a continuous work to enhance the true aroma of the truffle, delicate, fungal, fragrant, far from the pungent artificial aroma that is added to most processed and over-the-counter products, and which uniforms and standardizes a product that has variability heterogeneous taste and aroma, also depending on the species used.
Furthermore, it is rare that one cannot digest the truffle: often this sensation is given precisely by the use of aromas. So don’t expect that strong smell when opening our products, you won’t find it!

Olli
It is a scorzone truffle pesto (Tuber aestivum), with organic oil from a Radicondoli farm, designed mainly for first courses.
Recommendations for use: do not cook the cream, the truffle should be heated but not cooked at a high temperature to best enhance its organoleptic qualities.
Pasta Generosa Recipe – First Course
Ingredients:
- A jar of Ollie cream (for 3 people)
- 300 g of caserecce
- Parmesan as needed
- Salt and oil
Cook the pasta and in the meantime brown a clove of garlic in a pan with a spoonful of butter and a little extra virgin olive oil. Drain the pasta, keeping a little of the cooking water. Remove the garlic, add the jar of Ollie cream and cooking water to taste. Turn off the heat, stir in the pasta with the parmesan. Serve hot.
Zara
It was designed to accompany croutons and cheeses, it features the same ingredients but in a more refined, spreadable and less protagonist form.
Recommendations for use: do not cook the cream, the truffle should be heated but not cooked at a high temperature to best enhance its organoleptic qualities.
Recipe: Delicious Sandwich – Appetizer
Ingredients:
- A jar of Zara cream
- A dozen croutons
- Mature parmesan
Heat some sliced rustic bread with a drizzle of oil in the oven. When it is golden brown, add grated or flaked Parmesan on half of the croutons and bake again for 15 minutes at 180 degrees. When the parmesan is well melted and coloured, remove from the oven. Spread Zara generously on all the croutons without parmesan. Join the two halves forming a delicious sandwich by combining truffle cream and parmesan.
Zara + Olli
Try mixing them! Use Zara to fill the homemade ravioli filling, combining it with fresh ricotta, salt, pepper and a little nutmeg. Season the filled pasta with melted butter, a few spoonfuls of parmesan cheese for stirring and give your dish the crunchy finish of our Ollie pesto! To accentuate the “crunchy” effect, add a sprinkling of toasted walnuts to garnish the dish.
Enjoy your meal!
